Most of our bakers learnt the trade using traditional methods and are therefore perfectly aware of the demanding standards needed to succeed as an artisan baker. Beautiful tasty products – this is the standard we set ourselves.
Going off the beaten track while preserving the traditional recipes led us to stick to using only puff pastry in our quiches. The same guidelines apply to the brioches, which are made using a great buttery recipe and a variety of original shapes and colours.
